Amanda’s tomatoes in a classic meat sauce

The only good thing that happens when a friend moves away is that she gives you her canned goods. 

My friend Amanda, who left Cape Cod for Portland, Oregon, left me with several jars of her home-grown tomatoes.  She warned me that they were very, very salty, but she was wrong.  They’re a little salty, but if you use them as both the tomatoes and the salt in a pasta sauce, they’re just perfect.
