Rhubarb cake

I’m fiddling with the recipe a bit to try and make it a little fluffier.  I cut back on the eggs (from 3 to 2), but is sunk just a bit in the center.  Too much baking powder, I think.  Luckily, I’ve got enough rhubarb to try again.

  1. Please let me know when you’ve perfected this. I’m putting in two rhubarb plants this year, despite the fact that I’ve never really eaten much rhubarb. It’s not that I dislike it, more a case of not knowing what to do with it.
