Winter squash in red curry, with pork loin

I wasn’t thrilled with it, but it wasn’t the fault of the squash, a gift from the most gifted gardener I know — my friend Christl.  She and her husband, Al, grew some truly remarkable squash, and I was the happy recipient of a very large amount of sweet, orange, winter squash.

I turned it into a curry, with onions, green beans, coconut milk, and red curry paste, but it needs some work.  When I get it right, I’ll pass it on.
