Eggplant in green curry

The recipe came from the ever-reliable SimplyRecipes.  I cooked the eggplant longer than specified, to make sure there was no sponginess, and we added a little smoked pork loin we happened to have on hand.  Other than that, I made it as written, and it was excellent.
