Eggplant in green curry

I made it pretty much by the SimplyRecipes book, and it was excellent.  I’m thinking, though, that we should roast the eggplant first, and then make the recipe.  Since we have a surfeit of eggplant, that won’t be a problem.

  1. When I first read the title of your post I thought it said Elephant in green curry. A surfeit of elephants would be deeply daunting, I think.
