Shiitakes in spaetzle

Kevin pulled out all the stops and made a farewell dinner for my parents, who are going back to Florida for the winter.  He made sauerbraten, braised red cabbage, and spaetzle with shiitakes — a meal the likes of which we’d never seen in this house.  It was interesting, and vibrant, and delicious.

  1. I’ve never had spaetzle with mushrooms. Usually with browned bread crumbs in butter, occasionally with sauteed onions, and then browned bread crumbs altogether in butter.

    Minus the mushrooms (which I love, but haven’t had with spaetzle) you just described one of my favorite meals- especially for cold weather!
