Well, one egg. The recipe was from the ever-reliable Simply Recipes, and the end product was irresistable. I’m a purist when it comes to banana bread — no spices, no nuts, no chocolate chips — and this version is simple and delicious. I used white whole wheat flour, and limited the sugar to 3/4 cup.
