This is why we lobster.

Lobster Roll
(Serves 2)

Meat from one 2 1/2-lb. lobster, roughly chopped
Half a small onion, chopped fine
Enough mayonnaise just to hold it together, about 3-4 tablespoons
A few tablespoons of chopped parsley
Sprinkling of salt

Mix all the ingredients together. Serve on two toasted (or grilled), buttered hot dog rolls. Revel in the fact that the sea yields up such excellent food.
