The stew had such arcane ingredients as dried boletes (given to me by a local mushroom forager) and porcini cubes, so I figure the recipe isn’t much good to anyone, but the banana bread was straightforward and tasty.
Banana Bread
(makes one loaf)
3 medium ripe bananas, mashed
1 egg
¾ c. sugar
¼ c. plain yogurt
2 T. butter, melted
½ t. vanilla
1 ½ c. white whole wheat flour
2 t. cinnamon
½ t. salt
1 t. baking soda
Preheat the oven to 350 degrees.
In a bowl big enough to hold all the ingredients, thoroughly combines the first 6 ingredients (bananas, egg, sugar, yogurt, butter, and vanilla).
In a separate bowl, thoroughly combine the remaining ingredients (flour, cinnamon, salt, and baking soda). Add the dry to the wet, and mix just to combine.
Pour the batter into a buttered loaf pan, and bake until a knife inserted in the center comes out clean, 50-60 minutes.
