Our friend Bob brought us some honey from his brother, who keeps bees. I’ve taken to making a simple blueberry compote as a pancake topping, and we used it for that.
Blueberry Compote
1 lb. fresh or frozen blueberries
2-4 T. honey, maple syrup, or sugar
1 cinnamon stick or 1 piece star anise (optional)
Combine all the ingredients in a small saucepan over medium heat. Bring to a boil, and turn down to a simmer. Cook until much of the liquid has evaporated and the compote is viscous. The time for this varies according to the moisture content of your berries. It should be in in the range of 15-30 minutes. As it’s cooking, taste and adjust the amount of sweetener. When it’s done, remove the cinnamon stick or star anise, if using.
