Eggs in a very disappointing warm potato salad

I had leftover hot-smoked salmon, I had potatoes, I had our very own new-laid eggs, and I had some decent frozen greenbeans.  A warm potato salad with a sour-cream-and-mayo dressing with lemon and anchovy seemed just the ticket.

Alas, it was mealy and dry.  But the eggs were delicious.
