Eggs and cranberries in Earth Dog Cranberry Pecan Bread*

This was the first attempt at cooking with my gleaned cranberries, and it was a moderate success.  The recipe is a slight adaptation of one from the Silver Palate Cookbook. 

Earth Dog Cranberry Pecan Bread

2 cups white whole wheat flour
½ cup sugar
1 T. baking powder
1 t. salt
2 eggs
2/3 cup orange juice
3 T. butter, melted
1 ¼ cup roughly chopped cranberries
2/3 cup roughly chopped pecans

1. Preheat the oven to 350 degrees and butter a standard-issue loaf pan. Combine the flour, sugar, baking powder, and salt, and then sift the mixture.

2. Beat together the eggs, orange juice, and butter. Add this mixture to the flour mixture, and stir just until everything is incorporated. Fold in the cranberries and pecans.

3. Pour the batter into the buttered loaf pan, and bake until a sharp knife inserted in the center comes out clean, 40-50 minutes.
