Shoulda been chocolate ...

I don’t generally make cakes, but we were celebrating both our first egg and my mother’s 70th birthday.  Fortunately, my mother is the kind of woman who doesn’t mind sharing the honors of the day with a bunch of chickens.

It was a pumpkin spice cake with a cream cheese frosting.  It was good but it was not great.  As Kevin pointed out, good cake requires the baker to throw nutritional concerns to the wind, and I am not very good at that.  The chocolate cake I had my eye on used a whole pound of semi-sweet chocolate in the frosting, and I just couldn’t pull the trigger.
