A curry with Dan’s halibut

Our friend Dan works on an oil tanker, and his work often takes him to Alaska.  When he was last there, he caught a monster halibut, and was good enough to give us some when he got it home (he froze it aboard ship).

I made a mild curry with some coconut milk and tomato, and added the cubed fish and some blanched green beans at the end.  I’m still perfecting the recipe; when it’s just right, I”ll post it.  This time, though, the fish carried it.
