My stepson, Eamon, is visiting us, and he and Kevin went fishing out in the Sound. Kevin came back empty-handed (he’d caught a fluke, but it was under the limit), but Eamon bagged a nice 21-inch bluefish. Kevin brined it, and then smoked it over low heat.
Today, he made bluefish cakes out if it by combining it with some cooked cod, breadcrumbs, eggs, and capers. The flavor was good but they were a bit on the heavy side, and Kevin wasn’t happy with them. When he perfects them, I’ll post the recipe.
