Smoked trout with onions and green beans

It wasn’t one of my best efforts, but it had the virtue of simplicity.  It was an onion, sauteed with some French-style green beans, with goat cheese and a little mustard.  Chicken stock turned it into a sauce, and I served it over pasta.

  2. Pat — I’m with you on the smoked trout — even if the dish is a little lackluster, the fish carries the day. We feel very lucky to live on a great trout pond.
